Pork Sliders 3 Ways: Italian Pork Cutlets

Ingredients

  • 1 lb (500 g) pork tenderloin

  • 1/4 cup (60 mL) dry bread crumbs

  • 1/4 cup (60 mL) grated Parmesan cheese

  • 1/2 tsp (2 mL) salt

  • 1 tsp (5 mL) Italian seasoning

  • 1/2 cup (125 mL) all purpose flour

  • 1 egg, beaten with 1 Tbsp (15 mL) water

  • 2 Tbsp (30 mL) canola oil

  • 12 slider rolls

  • Garnish with shredded iceberg lettuce and mayonnaise

Directions

  1. Cut the pork tenderloin crosswise into 12 even pieces about 3/4 inch thick. Lay the pieces between sheets of plastic wrap and pound with a mallet until flattened into rounds roughly 2 1/2 inches in diameter and 1/4 inch thick.

  2. In a bowl, combine bread crumbs, Parmesan cheese, salt and Italian seasoning.

  3. Dip cutlets into flour to coat; shake off excess. Dip in egg mixture, then coat with bread crumb mixture.

  4. Heat oil in a large nonstick skillet over medium-high heat. Sauté cutlets until golden brown on both sides.

  5. Serve on a toasted roll if desired and put a pork cutlet on each roll. Top each piece of pork with shredded lettuce and mayonnaise.
