Bacon, Ranch Macaroni Salad

No matter what the occasion this bacon ranch macaroni salad is sure to be a big hit!

Ingredient

  • 2 cups (500 mL) uncooked elbow macaroni

Dressing:

  • 1/4 cup (60 mL) sour cream

  • 1/4 cup (60 mL) mayonnaise

  • 1/2 cup (125 mL) buttermilk

  • 1 tsp (5 mL) garlic powder

  • 1 tsp (5 mL) onion powder

  • 1 tsp (5 mL) dried dill

  • 1 Tbsp (15 mL) dried parsley

  • 1 Tbsp (15 mL) chives

  • 1/2 tsp (2 mL) dry mustard powder

  • 1/2 tsp (2 mL) salt

  • 1/4 tsp (1 mL) freshly ground black pepper

Salad:

  • 1 cup (250 mL) frozen peas, thawed

  • 3/4 cup (175 mL) cheddar cheese, diced

  • 1/2 cup (125 mL) red onion, diced

  • 8 slices bacon, cooked and crumbled

Directions:

  1. Cook macaroni according to package directions; drain and rinse in cold water.

  2. In a large bowl, whisk together sour cream, mayonnaise, milk, garlic powder, onion powder, dill, parsley, chives, mustard powder, salt and pepper.

  3. Add macaroni, peas, cheese, red onion and bacon to dressing; mix well.

  4. Cover and place in the refrigerator for 2 hours.
