Ham, Cheese and Cucumber Salad

This is not your classic cucumber salad! We’ve added ham, cheese and red pepper to put a twist on the traditional.

Ingredient

  • 1 1/2 cups (375 mL) smoked ham, cut into strips

  • 3 large English cucumbers, diced

  • 1 1/2 cups (375 mL) white cheese, diced

  • 1 medium red pepper, diced

Dressing:

  • 1/2 cup (125 mL) sour cream

  • 1/2 cup (125 mL) mayonnaise

  • 2 Tbsp (30 mL) white vinegar

  • 1 Tbsp (15 mL) Dijon mustard

  • 1 tsp (5 mL) granulated sugar

  • 1 clove garlic, minced

  • 1/2 tsp (2 mL) salt

  • 1/4 tsp (1 mL) freshly ground black pepper

  • Fresh parsley, garnish

Directions:

  1. In a large bowl, combine ham, cucumber, cheese and red peppers. Set aside.

  2. In a small bowl, mix together sour cream, mayonnaise, vinegar, mustard, sugar, garlic, salt and pepper. Add mixture to salad ingredients; mix well.

  3. Cover and refrigerate for at least 2 hours. Serve.
