Slow Cooker Cape-Verde Pork Belly Stew

This slow cooker pork stew is the perfect comfort food for when you want something hearty and satisfying on a stressful day.

Ingredient

  • 1 lb (500 g) pork belly, cut into 1 inch chunks

  • 4 chorizo sausages, sliced

  • 1 (15 oz/425 mL) can hominy, drained

  • 1 (19 oz/540 mL ) red kidney beans, rinsed and drained

  • 1 (28 oz /796 mL) can no salt diced tomatoes

  • 1 medium onion, finely chopped

  • 4 garlic cloves, minced

  • 4 cups (1 L) low sodium chicken broth

  • 1 Tbsp (15 mL) tomato paste

  • 1 potato, peeled and cut into 1 inch chunks

  • 1 small sweet potato, peeled and cut into 1 inch chunks

  • 2 bay leaves

  • 1 tsp (5 mL) smoked paprika

  • 1/2 tsp (2 mL) sea salt

  • 1/4 tsp (1 mL) freshly ground black pepper

Directions:

  1. In a slow cooker, combine all ingredients and stir.

  2. Cover slow cooker and cook on low-heat setting for 6-8 hours or until meat and vegetables are tender.

  3. Discard bay leaves. Stir and Serve.
