Bacon, Mushroom Spring Greens with Blue Cheese Crumbs

Crispy bacon, mushrooms, spring greens and blue cheese come together to create a truly scrumptious salad combination drizzled with balsamic dressing. Perfect for entertaining or just a simple weeknight meal.

Ingredient

  • 8 slices bacon, cut into 1 inch pieces

  • 2 cups (500 mL) mushrooms, sliced

  • 1/2 tsp (2 mL) salt

  • 1/4 tsp (1 mL) black pepper

  • 8 cups (2 L) spring greens

  • 1/2 cup (125 mL) crumbled blue cheese

Balsamic Dressing:

  • 3 Tbsp (45 mL) balsamic vinegar

  • 3 Tbsp (45 mL) olive oil

  • 1 Tbsp (15 ml) honey

  • 1 Tbsp (15 mL) Dijon mustard

  • 1 clove garlic, minced

  • 1/2 tsp (2 mL) sea salt

  • 1/4 tsp (1 mL) ground black pepper

Directions:

  1. In a skillet over medium heat, fry bacon, stirring occasionally until crisp, about 8 - 10 minutes. Transfer to a paper towel-lined plate. Set aside.

  2. Add mushrooms in the same skillet, cook without stirring until browned on one side, about for 4 - 5 minutes. Stir and allow to cook another 3 - 4 minutes until golden brown on all sides. Season with salt and pepper.

  3. Place spring greens on 4 salad plates and top with bacon, mushrooms and blue cheese. Set aside.

For the dressing:

  1. In a bowl whisk together, vinegar, oil, honey, mustard, garlic, salt and pepper. Drizzle desired amount over salads. Serve.
