Garlic Marinated Porterhouse Pork Chops with Chipotle Sauce

Marinated and grilled to perfection, these mouthwatering pork chops are simple to prepare and delicious to eat.

Ingredient

  • 4 porterhouse boneless pork chops

Marinade:

  • 1/4 cup (60 mL) canola oil

  • 2 Tbsp (30 mL) brown sugar

  • 4 cloves garlic, minced

  • 1/2 tsp (2 mL) onion powder

  • 1 1/2 Tbsp (20 mL) lemon juice

  • 1 Tbsp (15 mL) Worcestershire sauce

  • 1 tsp (5 mL) mustard powder

  • 1/2 tsp (2 mL) sea salt

  • 1/2 tsp (2 mL) fresh ground pepper

Sauce:

  • 1/4 cup (60 mL) low fat mayonnaise

  • 1/4 cup (60 mL) light sour cream

  • 1 Tbsp (15 mL) lime juice

  • 1 - 2 Chipotle chiles in adobo sauce, pureed

Directions

  1. Place pork chops into a resealable plastic bag.

  2. In a small mixing bowl, whisk together canola oil, brown sugar, garlic, onion powder, lemon juice, Worcestershire sauce, ground mustard, salt and pepper.

  3. Pour over the pork chops in the plastic bag. Seal and place in the refrigerator overnight.

  4. Remove chops from marinade and discard marinade.

  5. Heat grill to medium-high and grill chops 4-5 minutes per side. This will vary based on the temperature of your grill and the thickness of the pork chops. Cook until the internal temperature of the thickest part of the pork chop reaches a safe internal temperature of 155°F (68°C).

  6. Remove from the grill, cover and allow to rest for 3-5 minutes to a Health Canada-recommended final internal temperature of 160°F (71°C).

  7. For Sauce: In a small bowl combine, mayonnaise, sour cream, lime juice and chipotle peppers until smooth. Chill until ready to serve.
