Ham and Cheese Tater Tot Breakfast Casserole

This cheesy breakfast bake is easy to prepare and has everything you need for a delicious morning meal and is sure to become a family favourite. Bonus points: it can be prepped the night before!

Ingredient:

  • oil for greasing baking dish

  • 5 slices thick-cut bacon, cooked and chopped

  • 1 1/2 cups (375 mL) chopped ham

  • 1 red pepper, diced

  • 2 1/2 cups (625 mL) sharp cheddar cheese, divided

  • 3/4 cup (175 mL) milk

  • 1/2 cup (125 mL) whipping cream

  • 8 large eggs

  • 1 tsp (5 mL) grainy mustard

  • 1/2 tsp (2 mL) onion powder

  • 1/2 tsp (2 mL) garlic powder

  • 1/2 tsp (2 mL) salt

  • 1/4 tsp (1 mL) pepper

  • 1/4 tsp (1 mL) paprika

  • 1 (800g) package frozen tater tots

  • 3 Tbsp (45 mL) chopped parsley

Directions:

  1. Lightly grease a 9x13-inch baking dish, or a casserole dish of similar size. Layer the bacon, ham, red pepper and 2 cups (500 mL) of cheese on the bottom of the dish. Reserve some of the bacon for topping.

  2. In a medium bowl, whisk together the milk, cream, eggs, mustard, onion powder, garlic powder, salt, and pepper. Pour evenly over the ham and cheese mixture. Top with the tater tots (still frozen). If not baking right away, cover tightly with foil and refrigerate until morning.

  3. When ready to bake, preheat the oven to 350ºF (180ºC). Bake, uncovered, for 50-70 minutes, until the eggs are set in the center. The time will vary depending on your oven and the depth of the casserole dish. Top with remaining cheese, reserved bacon and bake for an additional 5-7 minutes until the sides are bubbling and the top is golden brown. Garnish with parsley, and let rest for 10 minutes before serving.
