Ham & Cheese Breakfast Egg Bites

These protein packed ham and cheese egg bites make the perfect breakfast on-the-go meal.

Ingredient

  • 10 large eggs

  • 1/4 cup (60 mL) milk

  • 1/2 tsp (2 mL) garlic powder

  • 1/2 tsp (2 mL) onion powder

  • 1/2 tsp (2 mL) salt

  • 1/4 tsp (1 mL) freshly ground black pepper

  • 1 cup (250 mL) cooked ham, diced

  • 1 cup (250 mL) shredded white cheddar

  • 2 Tbsp (30 mL) fresh parsley, chopped

Directions:

  • Preheat the oven to 350°F (180°C). Spray a 12 cup muffin tin with non-stick cooking spray, set aside.

  • In a large bowl, whisk together eggs, milk, garlic powder, onion powder, salt and pepper.

  • Combine ham, 3/4 cup (175 mL) cheese and parsley with egg mixture.

  • Divide egg mixture evenly into muffin cups and sprinkle with remaining 1/4 cup (60 mL) of cheese.

  • Bake for 20-25 minutes or until set.

    Note: Allow muffins to cool and then store in a ziplock bag or container with a lid for 2-3 days or in the freezer for up to one month.
