Canadian Bacon and Potato Frittata

Ingredient
- 8 large eggs 
- 1 Tbsp (15 mL) fresh chives, chopped 
- 1/4 cup (60 mL) shredded Parmesan cheese 
- 1/2 cup (125 mL) shredded cheddar cheese 
- 1/2 tsp (2 mL) salt 
- 1/4 tsp (1 mL) freshly ground black pepper 
- 1 Tbsp (15 mL) canola oil 
- 6 slices Canadian bacon, chopped 
- 2 clove garlic, minced 
- 2 medium white potatoes, cooked, cooled and cut into ½ inch chunks 
- Fresh basil, for garnish (optional) 
- Fresh oregano, for garnish (optional) 
- Fresh thyme, for garnish (optional) 
Directions:
- In a large bowl, whisk together eggs, chives, Parmesan, cheddar cheese, salt and pepper. Set aside. 
- In a large non-stick skillet, heat canola oil over medium heat, add bacon to skillet and cook for about 2 minutes. Add garlic and saute, another 1-2 minutes. 
- Combine potatoes with bacon and cook 2 minutes longer; remove from heat. 
- Pour egg mixture over potatoes, stirring gently to combine. 
- Cover and cook over low heat for 8 to 10 minutes or until eggs are set. 
- Sprinkle with fresh herbs and serve.
