Canadian Bacon and Potato Frittata

Ingredient

  • 8 large eggs

  • 1 Tbsp (15 mL) fresh chives, chopped

  • 1/4 cup (60 mL) shredded Parmesan cheese

  • 1/2 cup (125 mL) shredded cheddar cheese

  • 1/2 tsp (2 mL) salt

  • 1/4 tsp (1 mL) freshly ground black pepper

  • 1 Tbsp (15 mL) canola oil

  • 6 slices Canadian bacon, chopped

  • 2 clove garlic, minced

  • 2 medium white potatoes, cooked, cooled and cut into ½ inch chunks

  • Fresh basil, for garnish (optional)

  • Fresh oregano, for garnish (optional)

  • Fresh thyme, for garnish (optional)

Directions:

  1. In a large bowl, whisk together eggs, chives, Parmesan, cheddar cheese, salt and pepper. Set aside.

  2. In a large non-stick skillet, heat canola oil over medium heat, add bacon to skillet and cook for about 2 minutes. Add garlic and saute, another 1-2 minutes.

  3. Combine potatoes with bacon and cook 2 minutes longer; remove from heat.

  4. Pour egg mixture over potatoes, stirring gently to combine.

  5. Cover and cook over low heat for 8 to 10 minutes or until eggs are set.

  6. Sprinkle with fresh herbs and serve.
