Italian Pork Sausage Sheet Pan Dinner

Ingredient

  • 8 Italian pork sausages

  • 3 Tbsp (45 mL) canola oil

  • 1 Tbsp (15 mL) Italian seasoning

  • 1 clove garlic, minced

  • ½ tsp (2 mL) salt

  • ¼ tsp (1 mL) freshly ground pepper

  • 1 medium red onion cut into chunks

  • 1 lb (500 g) baby potatoes, cut in half

  • 3 carrots, peeled and cut into 2-inch pieces

Directions

  1. Preheat oven to 425 °F (220 °C). Spray a large baking sheet with cooking spray.

  2. In a small bowl whisk together canola oil, Italian seasoning, garlic, salt and pepper.

  3. In a large bowl, mix together onion, potatoes and carrots. Pour oil mixture over vegetables and toss to coat.

  4. Place vegetables and sausage on baking sheet. Bake for 25 to 30 minutes or until sausage is cooked through and vegetables are tender. Remove from oven and serve.
