Katsu Sando Sandwich

These cutlets are great on their own but so tasty in this sandwich!

Ingredient

  • 4 pork cutlets

  • 1/2 tsp (2 mL) kosher salt

  • 1/4 tsp(1 mL) black pepper

  • 1/2 cup (125 mL) all-purpose flour

  • 2 large eggs, beaten

  • 1 1/2 cups (375 mL) panko bread crumbs

  • 1 - 1 1/2 cups (250 - 375 mL) canola oil

  • 2 cups (500 mL) shredded cabbage

  • 8 slices white sandwich bread, crust removed

  • 2 Tbsp (30 mL) mayonnaise

Tonkatsu Sauce:

  • 2 Tbsp (30 mL) ketchup

  • 1 1/2 Tbsp (20 mL) Worcestershire sauce

  • 1 Tbsp (15 mL) soy sauce

  • 1 Tbsp (15 mL) mirin

  • 1 Tbsp (15 mL) granulated sugar

  • 1 tsp (5 mL) Dijon mustard

  • 1/4 tsp (1 mL) garlic powder

Directions

  1. Season cutlets on both sides with salt and pepper.

  2. Place the flour in a wide bowl, beat eggs in another bowl, and place the panko in a third bowl.

  3. Coat a cutlet thoroughly in the flour, dip into egg (Allow the excess to drip off), then completely coat on all sides with the panko. Repeat with remaining cutlets.

  4. Heat canola oil in a large skillet over medium heat. Once hot, add the coated cutlets in batches, frying until golden and cooked through. About 3-4 minutes per side depending on the cutlet thickness. Transfer to a paper towel-lined plate. Repeat with remaining cutlets.

  5. To make sauce: In a medium bowl, whisk together the ketchup, Worcestershire sauce, soy sauce, mirin, sugar, and garlic powder until smooth. Cover and refrigerate until ready to use.

  6. Spread Tonkatsu sauce on one side of each slice of bread, cover with shredded cabbage and top with fried pork cutlet. Spread mayonnaise on a second slice of bread and place on top of cutlet. Repeat with remaining slices of bread. Press sandwich and cut in half. Serve
