Slow Cooker Cape-Verde Pork Belly Stew
This slow cooker pork stew is the perfect comfort food for when you want something hearty and satisfying on a stressful day.

Ingredient
- 1 lb (500 g) pork belly, cut into 1 inch chunks 
- 4 chorizo sausages, sliced 
- 1 (15 oz/425 mL) can hominy, drained 
- 1 (19 oz/540 mL ) red kidney beans, rinsed and drained 
- 1 (28 oz /796 mL) can no salt diced tomatoes 
- 1 medium onion, finely chopped 
- 4 garlic cloves, minced 
- 4 cups (1 L) low sodium chicken broth 
- 1 Tbsp (15 mL) tomato paste 
- 1 potato, peeled and cut into 1 inch chunks 
- 1 small sweet potato, peeled and cut into 1 inch chunks 
- 2 bay leaves 
- 1 tsp (5 mL) smoked paprika 
- 1/2 tsp (2 mL) sea salt 
- 1/4 tsp (1 mL) freshly ground black pepper 
Directions:
- In a slow cooker, combine all ingredients and stir. 
- Cover slow cooker and cook on low-heat setting for 6-8 hours or until meat and vegetables are tender. 
- Discard bay leaves. Stir and Serve.
