Ham Penne Carbonara

Get your picky eaters to the table with this easy but delicious grown up version of mac and cheese!

Ingredient

  • 1 Tbsp (15 mL) butter

  • 1/4 cup (60 mL) onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup (250 mL) cooked ham, cubed

  • 2 cups (500 mL) half and half

  • 2 large egg yolks

  • 1 1/2 cups (375 mL) Parmesan cheese, finely grated

  • 1/4 tsp (1 mL) freshly ground black pepper

  • 1 lb (500 g) penne pasta

  • Fresh parsley, for garnish

Directions:

  1. In a large skillet, melt butter over medium heat. Add onion and garlic and saute 2 - 3 minutes or until tender. Remove from heat, add ham and stir to combine.

  2. In a medium bowl, whisk together half and half, egg yolks, Parmesan cheese and black pepper; set aside.

  3. Bring a large pot of salted water to boil over high heat. Add the pasta and cook according to package instructions. Drain.

  4. Add ham and cream mixture to pasta. Quickly folding cream mixture into pasta so as not to scramble the eggs.

  5. Garnish with more Parmesan cheese and parsley if desired and serve immediately.
