Mexicali Pork Soup

Ingredients

1 small yellow onion, diced

1 - 19 oz / 540 mL can black beans, drained, and rinsed

1 - 19 oz / 540 mL can diced tomatoes, undrained

1 - 12 oz / 341 mL can whole kernel corn, undrained

2 - 4.5 oz / 127 mL cans chopped green chilies

1 Tbsp / 15 mL canola oil

1 lb / 0.5 kg lean ground pork

1 ½ cups / 375 mL beef broth

1 cup / 250 mL water

2 tsp / 10 mL chili powder

1 tsp / 5 mL ground cumin

Directions

1. DICE ONION

Peel the onion, slice it in half and rinse under cold water to minimize the compounds that cause eyes to tear.

Place onion halves on the cutting board

and with a sharp knife, dice the onion; set aside.

2. PREP CANNED GOODS

Using the can opener, open all canned goods – black beans, tomatoes, corn and chilies, set aside.

Use the strainer to drain and rinse the

black beans under cold running water.

3. COOK ONION

In a large pot, heat 1 Tbsp of canola oil over medium-high heat.

Add onion and sauté for 2 minutes,

stirring often with the spatula.

4. COOK PORK

Add ground pork and thoroughly cook until no pink remains, breaking up larger pieces with the spatula, about

10 minutes.

5. ADD CANNED GOODS

Once most of the cooking liquid has evaporated, add the rinsed black beans, tomatoes, corn and chilies. Using the wooden spoon, stir to combine.

6. ADD LIQUIDS

Using the liquid measuring cup, measure 1 ½ cups of beef broth; add to the pot. Measure 1 cup of water; add to the pot. Stir to combine.

7. ADD SPICES

Using measuring spoons, measure 2 tsp of chili powder and 1 tsp of cumin; add spices to the pot. Stir to combine.

Bring the soup to a boil over high heat.

Reduce heat to low, cover the pot with the lid and simmer, about 15 minutes.

8. FINISH & SERVE

Ladle soup into individual bowls and garnish with chopped cilantro, tortilla chips, avocado slices, shredded cheese or sour cream.
